Quick Vegetable Biryani
A flavorful and aromatic rice dish with mixed vegetables, fragrant spices, and layered technique.
Ingredients
- 9g Basmati Rice
- 1/2 cup Mixed Vegetables (Carrots, Beans, Cauliflower)
- 4g Onion
- 14g Peas
- 1/2 tsp Ginger-Garlic Paste
- 1 tsp Biryani Masala
- 1/4 tsp Turmeric Powder
- Few Mint Leaves
- Few Cilantro
- 2 tbsp Cooking Oil
- 1 tsp Ghee (Clarified Butter)
- Pinch Saffron Strands
- 1 tbsp Warm Milk
Instructions
- Rinse the rice and soak it in water for 30 minutes.
- Dissolve saffron strands in warm milk and set aside.
- Finely chop the onion and vegetables.
- In a pot, heat cooking oil and sauté chopped onions until golden brown.
- Add ginger-garlic paste and sauté for a minute until fragrant.
- Stir in biryani masala and turmeric powder. Cook for a minute.
- Add the mixed vegetables and sauté for 4-5 minutes until lightly cooked.
- Drain the rice and parboil it in a separate pot with salted water until it is 70% cooked. Drain the water.
- Layer half of the parboiled rice over the sautéed vegetables in the pot.
- Sprinkle half of the mint and cilantro leaves over the rice layer.
- Drizzle half of the saffron milk over the rice layer.
- Add the remaining rice over the top, followed by the remaining mint, cilantro, and saffron milk.
- Drizzle ghee over the top.
- Cover the pot tightly with a lid and cook on low heat (dum) for 15-20 minutes.
- Gently fluff the rice with a fork before serving.
- Serve hot with yogurt or raita.
