  1. Rinse the rice and soak it in water for 30 minutes.
  2. Dissolve saffron strands in warm milk and set aside.
  3. Finely chop the onion and vegetables.
  4. In a pot, heat cooking oil and sauté chopped onions until golden brown.
  5. Add ginger-garlic paste and sauté for a minute until fragrant.
  6. Stir in biryani masala and turmeric powder. Cook for a minute.
  7. Add the mixed vegetables and sauté for 4-5 minutes until lightly cooked.
  8. Drain the rice and parboil it in a separate pot with salted water until it is 70% cooked. Drain the water.
  9. Layer half of the parboiled rice over the sautéed vegetables in the pot.
  10. Sprinkle half of the mint and cilantro leaves over the rice layer.
  11. Drizzle half of the saffron milk over the rice layer.
  12. Add the remaining rice over the top, followed by the remaining mint, cilantro, and saffron milk.
  13. Drizzle ghee over the top.
  14. Cover the pot tightly with a lid and cook on low heat (dum) for 15-20 minutes.
  15. Gently fluff the rice with a fork before serving.
  16. Serve hot with yogurt or raita.
