Shrimp Scampi with Zucchini Noodles
A lighter take on classic shrimp scampi, served over zucchini noodles.

- Use a spiralizer to create zucchini noodles.
- Mince the garlic.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and red pepper flakes, cook for 1 minute until fragrant.
- Add shrimp and cook until pink and opaque, about 3-4 minutes. Ensure the internal temperature reaches 145°F (63°C).
- Deglaze the pan with dry white wine, scraping up any browned bits.
- Add zucchini noodles to the skillet and toss to coat.
- Cook for another 2-3 minutes, until zucchini is tender-crisp.
- Squeeze lemon juice over the shrimp and zucchini.
- Season with salt and pepper to taste.
- Serve immediately, garnished with fresh parsley.
