  1. Cook rice according to package instructions.
  2. Dice onions. Sauté in olive oil until softened and translucent.
  3. Add ginger-garlic paste and cook for 1 minute until fragrant.
  4. Add chopped tomatoes and cook until tomatoes soften, about 5 minutes.
  5. Stir in turmeric, garam masala, and chili powder. Cook for another minute.
  6. Add spinach and coconut milk, simmer until spinach wilts and curry thickens, about 10 minutes.
  7. Taste and adjust seasonings as needed.
  8. Serve hot over cooked rice. Garnish with chopped cilantro.
