Spinach and Tomato Curry with Brown Rice
A flavorful and aromatic curry featuring spinach, tomatoes, and a blend of Indian spices served with brown rice.
Ingredients
- 1 lb Spinach
- 3 medium Tomatoes
- 1 large Onion
- 1.5 cups Rice
- 1 can (13.5 oz) Coconut Milk (light)
- 2 tbsp Ginger Garlic Paste
- 1 tsp Turmeric
- 1/2 tsp Garam Masala
- 1/4 - 1/2 tsp (adjust to taste) Chili Powder
- 1 tbsp Olive Oil
- 2 tbsp chopped (for garnish) Cilantro
Instructions
- Cook rice according to package instructions.
- Dice onions. Sauté in olive oil until softened and translucent.
- Add ginger-garlic paste and cook for 1 minute until fragrant.
- Add chopped tomatoes and cook until tomatoes soften, about 5 minutes.
- Stir in turmeric, garam masala, and chili powder. Cook for another minute.
- Add spinach and coconut milk, simmer until spinach wilts and curry thickens, about 10 minutes.
- Taste and adjust seasonings as needed.
- Serve hot over cooked rice. Garnish with chopped cilantro.
