Egg & Potato Scramble with Peppers & Onions

  1. Dice potatoes, peppers, and onions.
  2. Mince garlic.
  3. Cook bacon and crumble.
  4. In a bowl, whisk eggs with Ms. Dash, salt and pepper.
  5. Heat olive oil in a non-stick pan over medium heat. Sauté potatoes until they begin to soften, about 5 minutes.
  6. Add peppers and onions; cook until softened, another 3 minutes.
  7. Add garlic and cook until fragrant, about 1 minute.
  8. Pour the egg mixture into the pan. Cook, gently lifting the cooked egg from the edges to allow uncooked egg to flow underneath, until the eggs are mostly set.
  9. Sprinkle shredded cheese and crumbled bacon over the top. Cover the pan and cook until the cheese is melted and the eggs are fully set.
  10. Garnish with fresh parsley before serving hot.
