Egg & Potato Scramble with Peppers & Onions
Ingredients
- 6 large Eggs
- 2 medium, diced Potatoes
- 1/2 medium, diced Peppers
- 1/4 medium, diced Onions
- 1 tsp Ms. Dash
- 2 cloves, minced Garlic
- 3 slices, cooked and crumbled Bacon
- 1/2 cup Shredded Cheddar Cheese
- 1 tbsp Olive Oil
- 1 tbsp, chopped Fresh Parsley
Instructions
- Dice potatoes, peppers, and onions.
- Mince garlic.
- Cook bacon and crumble.
- In a bowl, whisk eggs with Ms. Dash, salt and pepper.
- Heat olive oil in a non-stick pan over medium heat. Sauté potatoes until they begin to soften, about 5 minutes.
- Add peppers and onions; cook until softened, another 3 minutes.
- Add garlic and cook until fragrant, about 1 minute.
- Pour the egg mixture into the pan. Cook, gently lifting the cooked egg from the edges to allow uncooked egg to flow underneath, until the eggs are mostly set.
- Sprinkle shredded cheese and crumbled bacon over the top. Cover the pan and cook until the cheese is melted and the eggs are fully set.
- Garnish with fresh parsley before serving hot.
