Pork Chop and Potato Skillet
A one-pan dinner featuring seared pork chops, crispy potatoes, and a savory garlic herb seasoning.
Ingredients
- 3 medium chops Fresh Center Cut Pork Chops
- 1.5 lbs Potatoes
- 4 cloves Garlic
- 3 tbsp Olive Oil
- 1 tsp dried Rosemary
- 1/2 tsp Paprika
- To taste Salt and Black Pepper
Instructions
- Preheat oven to 425°F (220°C). Adjust rack to middle position.
- Cut potatoes into 1-inch cubes. Toss with 2 tbsp olive oil, paprika, salt, pepper, and rosemary.
- Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat. Sear pork chops for 3-4 minutes per side to develop a golden crust.
- Add potatoes and minced garlic to the skillet around the pork chops.
- Transfer skillet to the oven and bake for 20-25 minutes, or until pork chops reach an internal temperature of 145°F (63°C) and potatoes are tender.
- Let rest for 5 minutes before serving. Optionally, finish with a squeeze of lemon juice for brightness.
