  2. Cut potatoes into 1-inch cubes. Toss with 2 tbsp olive oil, paprika, salt, pepper, and rosemary.
  3. Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat. Sear pork chops for 3-4 minutes per side to develop a golden crust.
  4. Add potatoes and minced garlic to the skillet around the pork chops.
  5. Transfer skillet to the oven and bake for 20-25 minutes, or until pork chops reach an internal temperature of 145°F (63°C) and potatoes are tender.
  6. Let rest for 5 minutes before serving. Optionally, finish with a squeeze of lemon juice for brightness.
