Stuffed Bell Peppers with Ground Beef and Egg

  1. Preheat oven to 375°F (190°C).
  2. Cut the bell peppers in half lengthwise and remove seeds and membranes. Drizzle with olive oil, salt and pepper. Place cut side up in baking dish.
  3. In a large skillet, brown ground beef over medium-high heat. Drain any excess fat.
  4. Add diced onion to the skillet and cook until softened, about 5 minutes.
  5. Stir in chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
  6. Mix in cooked rice and salsa. Simmer for 5 minutes to allow flavors to meld.
  7. Remove from heat and stir in the eggs and half of the chopped cilantro. The residual heat will cook the eggs slightly.
  8. Spoon the ground beef mixture into the bell pepper halves.
  9. Place stuffed peppers in a baking dish and cover with foil.
  10. Bake for 30 minutes. Remove foil, sprinkle with shredded cheddar cheese, and bake for another 10 minutes, or until cheese is melted and bubbly.
  11. Before serving, drizzle with lime juice and garnish with the remaining fresh cilantro.
  12. Let cool slightly before serving.
