Stuffed Bell Peppers with Ground Beef and Egg
Bell peppers stuffed with a savory ground beef and egg mixture, seasoned with Mexican spices and enhanced with fresh herbs and lime.
Ingredients
- 3 Bell peppers
- 500g Ground beef
- 3 large Eggs
- 1 medium, diced Onion
- 1 cup Cooked rice
- 1 cup Mexican salsa
- 1/2 cup Cheddar cheese, shredded
- 1 tbsp Olive oil
- 1 tbsp Chili powder
- 1 tsp Cumin
- 1 tsp Garlic powder
- 1/2 tsp Smoked paprika
- 2 tbsp Fresh cilantro, chopped
- 1 tbsp Lime juice
- to taste Salt
- to taste Pepper
Instructions
- Preheat oven to 375°F (190°C).
- Cut the bell peppers in half lengthwise and remove seeds and membranes. Drizzle with olive oil, salt and pepper. Place cut side up in baking dish.
- In a large skillet, brown ground beef over medium-high heat. Drain any excess fat.
- Add diced onion to the skillet and cook until softened, about 5 minutes.
- Stir in chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
- Mix in cooked rice and salsa. Simmer for 5 minutes to allow flavors to meld.
- Remove from heat and stir in the eggs and half of the chopped cilantro. The residual heat will cook the eggs slightly.
- Spoon the ground beef mixture into the bell pepper halves.
- Place stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes. Remove foil, sprinkle with shredded cheddar cheese, and bake for another 10 minutes, or until cheese is melted and bubbly.
- Before serving, drizzle with lime juice and garnish with the remaining fresh cilantro.
- Let cool slightly before serving.
