Baked Cod with Tomato and Olive Sauce

- Preheat oven to 400°F (200°C).
- Heat olive oil in a pan over medium heat. Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
- Stir in pasta sauce, olives, oregano, salt, and pepper. Simmer for 5 minutes to allow flavors to meld.
- Pat the cod fillets dry with paper towels and season with salt and pepper.
- Place cod fillets in a baking dish and pour the tomato sauce mixture over them.
- Bake for 15-20 minutes, or until cod is cooked through and flakes easily with a fork. Ensure internal temperature reaches 145°F (63°C).
- Garnish with fresh basil before serving.
