Italian Zucchini Noodle 'Pasta' Salad

Ingredients
- 2 medium Zucchini
- 1/4 cup Italian Dressing (Low Sodium)
- 1/2 cup Kalamata Olives
- 1/4 cup Sun-dried Tomatoes (oil-free)
- 1/2 cup Fresh Mozzarella Cheese Pearls
- 1/4 cup, chiffonade Fresh Basil
- 1 tbsp Red Wine Vinegar
- 1/2 tsp Dried Oregano
- 1/4 tsp Garlic Powder
Instructions
- Use a spiralizer to create zucchini noodles. Pat dry with paper towels to remove excess moisture.
- In a bowl, whisk together Italian dressing, red wine vinegar, dried oregano, and garlic powder.
- Combine zucchini noodles with Kalamata olives, sun-dried tomatoes, and mozzarella in a large bowl.
- Pour the dressing over the zucchini mixture and toss gently to combine.
