Canadian Cottage Cheese and Bacon Scramble
A high-protein breakfast scramble with cottage cheese, crispy bacon, and a touch of maple syrup.
Ingredients
- 6 Eggs
- 1 tbsp Butter
- 250 g Bacon
- 1 cup Cottage Cheese (low sodium, 2% milk fat)
- to taste Maple Syrup (optional, grade A dark)
- 1 tbsp Chives (fresh, finely chopped, optional)
- to taste Black Pepper (freshly ground)
- 1/4 tsp Smoked Paprika
Instructions
- Cook bacon in a cast iron pan over medium heat until crispy. Remove bacon and set aside on paper towels, reserving 1 tbsp of bacon fat in the pan.
- Whisk eggs, cottage cheese, smoked paprika, and black pepper together until well combined. Ensure cottage cheese is well integrated for a smoother texture.
- Pour egg mixture into the pan with the bacon fat. Scramble gently over low-medium heat, stirring occasionally to prevent sticking, until cooked through but still slightly moist (about 5-7 minutes).
- Crumble bacon over the scramble.
- Serve immediately with a drizzle of maple syrup and sprinkle of fresh chives, if desired. Season with additional black pepper to taste.
