  2. Whisk eggs, cottage cheese, smoked paprika, and black pepper together until well combined. Ensure cottage cheese is well integrated for a smoother texture.
  3. Pour egg mixture into the pan with the bacon fat. Scramble gently over low-medium heat, stirring occasionally to prevent sticking, until cooked through but still slightly moist (about 5-7 minutes).
  4. Crumble bacon over the scramble.
  5. Serve immediately with a drizzle of maple syrup and sprinkle of fresh chives, if desired. Season with additional black pepper to taste.
