Lemony White Bean Pasta with Spinach and Tomatoes

  1. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil in a large pan over medium heat.
  3. Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
  4. Add drained and rinsed white beans and chopped tomatoes. Cook for 5-7 minutes, until tomatoes start to soften.
  5. Stir in fresh spinach and cook until wilted, about 2 minutes.
  6. Add lemon juice and zest. Season with salt and pepper.
  7. Add the cooked pasta to the pan with the white bean mixture. Toss to combine, adding a little of the reserved pasta water if the sauce seems too dry.
  8. Stir in chopped fresh parsley.
  9. Serve immediately, garnished with extra parsley and a drizzle of olive oil if desired.
