Lemony White Bean Pasta with Spinach and Tomatoes
A light and flavorful pasta dish with white beans, spinach, and a bright lemon sauce.

- Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- While pasta is cooking, heat olive oil in a large pan over medium heat.
- Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
- Add drained and rinsed white beans and chopped tomatoes. Cook for 5-7 minutes, until tomatoes start to soften.
- Stir in fresh spinach and cook until wilted, about 2 minutes.
- Add lemon juice and zest. Season with salt and pepper.
- Add the cooked pasta to the pan with the white bean mixture. Toss to combine, adding a little of the reserved pasta water if the sauce seems too dry.
- Stir in chopped fresh parsley.
- Serve immediately, garnished with extra parsley and a drizzle of olive oil if desired.
