Gourmet Peanut Butter Chicken Satay Skewers with Coconut Rice
Ingredients
- 1/2 cup (smooth or crunchy, your choice) Kraft Peanut Butter
- 1.5 lbs, boneless, skinless, cut into 1-inch cubes Chicken Thighs
- 3 tbsp Soy Sauce (low sodium)
- 2 tbsp Honey
- 2 tbsp Lime Juice
- 3 cloves, minced Garlic
- 1 tbsp, grated Ginger
- 1/2 tsp (or to taste) Red Pepper Flakes
- 1/4 cup Coconut Milk (full fat)
- about 20 Skewers
- 1 tbsp Sesame Oil
- 1 tbsp Brown Sugar
- 1 cup Rice
- 1 cup Water
Instructions
- In a medium bowl, whisk together the Kraft Peanut Butter, soy sauce, honey, lime juice, minced garlic, grated ginger, red pepper flakes, brown sugar, and coconut milk. The addition of coconut milk enriches the sauce, while brown sugar adds a touch of caramelization during grilling.
- Add the chicken cubes to the peanut butter mixture and toss to coat evenly. Cover and marinate in the refrigerator for at least 2 hours, or preferably overnight. Longer marinating times allow the flavors to penetrate deeply into the chicken.
- While the chicken is marinating, soak wooden skewers in water for at least 30 minutes to prevent them from burning during grilling. If using metal skewers, this step is not necessary.
- Prepare coconut rice: Rinse 1 cup of rice until the water runs clear. In a saucepan, combine the rice with 1 cup of water and 1/2 cup of coconut milk. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed. Fluff with a fork.
- Preheat your grill to medium heat. Alternatively, you can use a grill pan on the stovetop or broil the skewers in the oven.
- Thread the marinated chicken cubes onto the skewers, leaving a small space between each cube for even cooking.
- Lightly brush the grill grates with sesame oil to prevent sticking. Grill the chicken skewers for 8-10 minutes per side, basting with extra marinade during the last few minutes of cooking. Basting creates a delicious glaze and keeps the chicken moist.
- Remove the skewers from the grill and serve immediately. Garnish with chopped cilantro, a sprinkle of sesame seeds, and a wedge of lime. Serve with the coconut rice for a complete and balanced meal.
