Chicken Fajita Bowl with Rice
A flavorful and filling dinner featuring chicken, peppers, onions, and rice.
Ingredients
- 1 (approx. 150g) Chicken Breasts
- 1/2 medium, sliced Onion
- 1/2 medium, sliced Green Bell Pepper
- 1/2 cup Jasmine Rice
- 2 tsp Fajita Seasoning
- 2 tbsp Salsa
- 1 tbsp Olive Oil
- 1 tbsp, chopped Cilantro
Instructions
- Cook rice according to package directions.
- Slice chicken breast into thin strips. Ensure chicken reaches an internal temperature of 165°F (74°C).
- In a bowl, toss chicken strips with fajita seasoning and a drizzle of olive oil.
- Heat remaining olive oil in a large skillet or pan over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes.
- Add sliced onions and green bell pepper to the pan. Cook until softened, about 5 minutes.
- In a bowl, combine cooked rice, chicken and vegetable mixture, and salsa.
- Top with chopped cilantro. Serve hot.
