  1. Cook rice according to package directions.
  2. Slice chicken breast into thin strips. Ensure chicken reaches an internal temperature of 165°F (74°C).
  3. In a bowl, toss chicken strips with fajita seasoning and a drizzle of olive oil.
  4. Heat remaining olive oil in a large skillet or pan over medium-high heat.
  5. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  6. Add sliced onions and green bell pepper to the pan. Cook until softened, about 5 minutes.
  7. In a bowl, combine cooked rice, chicken and vegetable mixture, and salsa.
  8. Top with chopped cilantro. Serve hot.
