  1. Press extra-firm tofu to remove excess water, then cube.
  2. Heat sesame oil in a wok or large pan over high heat. Add minced ginger and garlic, and sauté until fragrant.
  3. Add tofu and stir-fry until golden brown and slightly crispy for improved texture.
  4. Add broccoli, bell pepper, and snap peas. Stir-fry until vegetables are tender-crisp.
  5. In a small bowl, whisk together tamari, maple syrup, and cornstarch until smooth. The cornstarch helps to thicken the sauce.
  6. Pour sauce over stir-fry and cook, stirring constantly, until sauce thickens and coats the vegetables and tofu.
  7. Stir in red pepper flakes for a touch of heat.
  8. Serve hot over cooked brown rice.
