  1. Heat ghee or coconut oil in a heavy-bottomed pan or Dutch oven over medium heat.
  2. Add onions and sauté until golden brown, about 5-7 minutes.
  3. Add ginger, garlic, and green chili (if using). Sauté for another minute until fragrant.
  4. Add curry powder, garam masala, and turmeric powder. Cook for another minute, stirring constantly, until fragrant.
  5. Add cauliflower florets and stir well to coat with the spice mixture.
  6. Pour in coconut milk, add salt to taste, and bring to a simmer. Cover the pan and cook until cauliflower is tender, about 15-20 minutes.
  7. Gently stir in paneer cubes and heat through for 3-5 minutes. Be careful not to break the paneer.
  8. Garnish with fresh cilantro.
  9. Serve hot.
