Keto-Friendly Panner and Cauliflower Curry
A rich and creamy Indian curry using cauliflower and panner for a low-carb, keto-friendly meal.
Ingredients
- 250 g Panner, cubed
- 1 medium head, cut into small florets Cauliflower
- 3 cloves, minced Garlic
- 1 medium, finely chopped Onion
- 1 tbsp Curry powder
- 1 tsp Garam masala
- 1/2 tsp Turmeric powder
- 1 can (400 ml) Full-Fat Coconut Milk
- 2 tbsp Ghee or Coconut Oil
- 1 inch piece, grated or minced Ginger
- 1, finely chopped (optional) Green chili
- 2 tbsp, chopped (for garnish) Cilantro
- To taste Salt
Instructions
- Heat ghee or coconut oil in a heavy-bottomed pan or Dutch oven over medium heat.
- Add onions and sauté until golden brown, about 5-7 minutes.
- Add ginger, garlic, and green chili (if using). Sauté for another minute until fragrant.
- Add curry powder, garam masala, and turmeric powder. Cook for another minute, stirring constantly, until fragrant.
- Add cauliflower florets and stir well to coat with the spice mixture.
- Pour in coconut milk, add salt to taste, and bring to a simmer. Cover the pan and cook until cauliflower is tender, about 15-20 minutes.
- Gently stir in paneer cubes and heat through for 3-5 minutes. Be careful not to break the paneer.
- Garnish with fresh cilantro.
- Serve hot.
