Clover Leaf Tuna & Bean Power Bowl
A quick and easy high-protein lunch bowl packed with tuna, beans, and a zesty lemon dressing.
Ingredients
- 1 can (85g) Light Tuna in Water, drained
- 1/2 cup (125ml) Canned Chickpeas, rinsed and drained
- 1/2, juiced Lemon
- 1 tbsp Olive Oil
- 1/2 tsp Dijon Mustard
- 1 tbsp Fresh Parsley, chopped
- to taste Salt
- to taste Black Pepper
Instructions
- In a bowl, combine the tuna and chickpeas.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Pour the dressing over the tuna and chickpeas. Gently stir to combine.
- Mix in chopped parsley.
- Serve immediately, or chill for later.
