  1. In a small bowl, mix shredded cheese with chili powder for added flavor.
  2. Spread cheese mixture on one half of each tortilla.
  3. Top with chopped spinach and diced bell peppers.
  4. Fold the tortilla in half.
  5. Cook in a lightly oiled skillet or griddle over medium heat until golden brown and the cheese is melted, flipping once.
  6. While quesadillas are cooking, fry the eggs to your liking. For a runny yolk, cook until the whites are set but the yolk is still soft.
  7. Serve the quesadillas topped with a fried egg. Garnish with a sprinkle of fresh cilantro or a dollop of sour cream, if desired.
