Spinach and Bell Pepper Quesadilla with Egg
A simple and quick vegetarian lunch option with cheese, spinach, bell peppers, and a fried egg.
Ingredients
- 1 cup, chopped Spinach
- 1/2 cup, diced Mini Bell Peppers
- 2 Eggs
- 2 Flour Tortillas
- 1/2 cup Shredded Cheddar Cheese
- 1/4 tsp Chili Powder
Instructions
- In a small bowl, mix shredded cheese with chili powder for added flavor.
- Spread cheese mixture on one half of each tortilla.
- Top with chopped spinach and diced bell peppers.
- Fold the tortilla in half.
- Cook in a lightly oiled skillet or griddle over medium heat until golden brown and the cheese is melted, flipping once.
- While quesadillas are cooking, fry the eggs to your liking. For a runny yolk, cook until the whites are set but the yolk is still soft.
- Serve the quesadillas topped with a fried egg. Garnish with a sprinkle of fresh cilantro or a dollop of sour cream, if desired.
