Italian Tuna & White Bean Salad
A hearty and healthy salad with tuna, white beans, and a lemon vinaigrette.
Ingredients
- 1 can (5 oz), drained Canned Tuna in Olive Oil
- 1 can (15 oz), rinsed and drained Canned Cannellini Beans
- 1/4 cup, finely chopped Red Onion
- 2 tbsp, chopped Fresh Parsley
- 1 tbsp juice + 1/2 tsp zest Lemon
- 2 tbsp Extra Virgin Olive Oil
- 1 clove, minced Garlic
- to taste Salt
- to taste Black Pepper
Instructions
- In a medium bowl, combine tuna, cannellini beans, red onion, and parsley.
- In a small bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, salt, and pepper.
- Pour dressing over the tuna mixture and toss gently to combine.
- Let salad sit for 10 minutes for flavors to meld.
- Serve immediately or chill for later.
