Mediterranean Quinoa Salad
A fresh and flavorful salad with quinoa, olives, cucumbers, tomatoes, and a lemon-herb dressing.
Ingredients
- 1/2 cup Quinoa
- 1/2 cup, diced Cucumber
- 1/2 cup, halved Cherry Tomatoes
- 1/4 cup, halved Kalamata Olives
- 1/4 cup, finely chopped Red Onion
- 2 tablespoons, chopped Fresh Parsley
- 2 tablespoons Lemon Juice
- 2 tablespoons Extra Virgin Olive Oil
- 1/2 teaspoon Dried Oregano
- to taste Salt
- to taste Black Pepper
- 1 tablespoon, chopped (optional) Fresh Mint
- 1/4 cup, crumbled (optional) Feta Cheese (Dairy-Free)
Instructions
- Rinse quinoa in a fine-mesh sieve until water runs clear.
- Cook quinoa according to package directions. Let cool completely. Fluff with a fork.
- In a large bowl, combine cooled quinoa, cucumber, cherry tomatoes, olives, red onion, parsley, and mint (if using).
- In a small bowl, whisk together lemon juice, extra virgin olive oil, oregano, salt, and black pepper.
- Pour dressing over quinoa mixture and toss gently to combine.
- Top with dairy-free feta (if using).
- Serve chilled or at room temperature. For best flavor, allow the salad to sit for at least 15 minutes before serving.
