  1. Rinse quinoa in a fine-mesh sieve until water runs clear.
  2. Cook quinoa according to package directions. Let cool completely. Fluff with a fork.
  3. In a large bowl, combine cooled quinoa, cucumber, cherry tomatoes, olives, red onion, parsley, and mint (if using).
  4. In a small bowl, whisk together lemon juice, extra virgin olive oil, oregano, salt, and black pepper.
  5. Pour dressing over quinoa mixture and toss gently to combine.
  6. Top with dairy-free feta (if using).
  7. Serve chilled or at room temperature. For best flavor, allow the salad to sit for at least 15 minutes before serving.
