Thai-Inspired Tuna Poke Bowls
Quick and flavorful tuna poke bowls with a Thai twist, perfect for a light and satisfying lunch.
Ingredients
- 454 g Tuna Poke Cubes
- 2 cups Cooked Sushi Rice
- 1 cup Shredded Carrots
- 1 cup Sliced Cucumber
- 3 tbsp Soy Sauce (low sodium)
- 1 tsp Sesame Oil
- 1 tbsp Rice Vinegar
- 1 tbsp Lime Juice
- 2 Green Onions, sliced
- 1 tbsp Sesame Seeds
- 1 Optional: Avocado, sliced
- to taste Optional: Sriracha Mayo
Instructions
- Prepare sushi rice according to package directions. Sushi rice adds a better texture and flavor
- While rice is cooking, prepare the vegetables.
- In a bowl, gently combine tuna poke cubes with soy sauce, sesame oil, rice vinegar, and lime juice. Be careful not to overmix the tuna.
- Assemble bowls by dividing rice among four bowls.
- Top with tuna mixture, carrots, cucumber, green onions, sesame seeds, and avocado (if using).
- Drizzle with sriracha mayo (if using).
- Serve immediately.
