Ground Beef & Black Bean Taco Fiesta Bowls
A customizable and high-protein taco bowl featuring seasoned ground beef, black beans, and fresh toppings.
Ingredients
- 1 lb Ground Beef
- 1 tbsp Olive Oil
- 1 medium, diced Onion
- 3 cloves, minced Garlic
- 2 tbsp Chili Powder
- 1.5 tsp Cumin
- 1 tsp Smoked Paprika
- 1 tsp Dried Oregano
- 1 (14.5 oz) can, undrained No-Salt-Added Canned Diced Tomatoes
- 1 (15 oz) can, rinsed and drained No-Salt-Added Black Beans
- 2.5 cups cooked Brown Rice
- 1.5 cup Shredded Cheddar Cheese (low sodium)
- 1 large, diced Avocado
- 1.5 cup Plain Greek Yogurt (low sodium)
- 1.5 cup Salsa (low sodium)
- 1/4 cup, chopped Fresh Cilantro
- 1 tbsp, fresh Lime Juice
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add diced onion and cook until softened and slightly translucent, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant, being careful not to burn.
- Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
- Stir in chili powder, cumin, smoked paprika, dried oregano, and no-salt-added diced tomatoes. Add lime juice. Bring to a simmer and cook for 15 minutes, stirring occasionally, allowing the flavors to meld.
- Stir in rinsed and drained black beans and cook for another 5 minutes, ensuring they are heated through.
- Prepare brown rice according to package instructions. Fluff with a fork after cooking.
- Divide cooked brown rice among bowls.
- Top with the seasoned ground beef mixture, shredded cheddar cheese, diced avocado, plain Greek yogurt, low-sodium salsa, and fresh cilantro.
- Serve immediately and enjoy!
