Ingredients

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add diced onion and cook until softened and slightly translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant, being careful not to burn.
  3. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  4. Stir in chili powder, cumin, smoked paprika, dried oregano, and no-salt-added diced tomatoes. Add lime juice. Bring to a simmer and cook for 15 minutes, stirring occasionally, allowing the flavors to meld.
  5. Stir in rinsed and drained black beans and cook for another 5 minutes, ensuring they are heated through.
  6. Prepare brown rice according to package instructions. Fluff with a fork after cooking.
  7. Divide cooked brown rice among bowls.
  8. Top with the seasoned ground beef mixture, shredded cheddar cheese, diced avocado, plain Greek yogurt, low-sodium salsa, and fresh cilantro.
  9. Serve immediately and enjoy!
