Sunrise Fiesta Scramble
A vibrant and protein-packed breakfast scramble with a Mexican twist.
Ingredients
- 2 Eggs
- 1/4 medium Onion
- 2 tbsp Salsa
- 1/4 cup Shredded Cheddar Cheese
- 1/4 cup, rinsed Black Beans
- 1 tsp Olive Oil
- 1/4 tsp Chili Powder
- 1/4 tsp Cumin
Instructions
- Dice the onion.
- Heat olive oil in a non-stick pan over medium heat.
- Add onion and cook until softened and fragrant, about 3 minutes.
- In a bowl, whisk eggs with chili powder and cumin.
- Add eggs to the pan and scramble until almost set.
- Stir in salsa and black beans.
- Continue cooking until heated through.
- Top with shredded cheddar cheese and serve immediately.
