Paneer Tikka Skewers with Bell Pepper and Zucchini
Grilled or baked paneer tikka skewers marinated in Indian spices and a yogurt marinade, served with grilled vegetables.
Ingredients
- 250 g, cut into 1-inch cubes Paneer
- 2 tbsp Tandoori Masala, 1 tsp Red Chili Powder Indian Spices (Tandoori Masala, Red Chili Powder)
- 1/2 of each pepper, cut into 1-inch pieces Bell Peppers (Green & Red)
- 1 medium, cut into 1-inch pieces Zucchini
- 1/2 cup, Greek or regular Plain Yogurt
- 3 cloves, minced Garlic
- 1 tbsp, fresh Lemon Juice
- 2 tbsp Olive Oil
- 1 inch piece, grated Ginger
- 1/2 tsp Turmeric Powder
- 1/2 tsp Garam Masala
Instructions
- Prepare the marinade: In a bowl, whisk together yogurt, tandoori masala, red chili powder, minced garlic, grated ginger, lemon juice, olive oil, turmeric powder, and garam masala.
- Add paneer cubes and vegetable pieces to the marinade, ensuring they are well coated. Gently mix to avoid breaking the paneer.
- Cover the bowl and marinate in the refrigerator for at least 1 hour, or preferably overnight, to allow the flavors to penetrate.
- Preheat grill to medium heat. If baking, preheat oven to 400°F (200°C).
- Thread paneer and vegetables onto skewers, alternating paneer, bell peppers, and zucchini.
- Grill skewers over medium heat for 15-20 minutes, turning occasionally, until paneer is lightly browned and vegetables are tender with slight char marks. Alternatively, bake in the preheated oven for 20-25 minutes, turning halfway through, until the same level of doneness is achieved.
- Serve hot with a sprinkle of fresh cilantro and a side of lemon wedges, if desired.
