  1. Prepare the marinade: In a bowl, whisk together yogurt, tandoori masala, red chili powder, minced garlic, grated ginger, lemon juice, olive oil, turmeric powder, and garam masala.
  2. Add paneer cubes and vegetable pieces to the marinade, ensuring they are well coated. Gently mix to avoid breaking the paneer.
  3. Cover the bowl and marinate in the refrigerator for at least 1 hour, or preferably overnight, to allow the flavors to penetrate.
  4. Preheat grill to medium heat. If baking, preheat oven to 400°F (200°C).
  5. Thread paneer and vegetables onto skewers, alternating paneer, bell peppers, and zucchini.
  6. Grill skewers over medium heat for 15-20 minutes, turning occasionally, until paneer is lightly browned and vegetables are tender with slight char marks. Alternatively, bake in the preheated oven for 20-25 minutes, turning halfway through, until the same level of doneness is achieved.
  7. Serve hot with a sprinkle of fresh cilantro and a side of lemon wedges, if desired.
