  1. Rinse the poha under running water until softened but not mushy. Drain well and set aside.
  2. Heat vegetable oil or ghee in a pan or wok over medium heat. Add mustard seeds and let them splutter. This usually takes about 30 seconds.
  3. Add curry leaves, garlic, and green chilies (if using). Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Add finely chopped onion and sauté until translucent and lightly golden, about 3-4 minutes.
  5. Add turmeric powder and red chili powder (if using). Sauté for about 30 seconds to bloom the spices.
  6. Gently add the softened poha to the pan. Mix well with the spices, ensuring the poha is evenly coated.
  7. Season with salt and garam masala to taste. Cook for 2-3 minutes, stirring gently to avoid breaking the poha.
  8. Push the poha to one side of the pan. Crack the eggs into the empty space and scramble them lightly. Cook until the eggs are mostly set but still slightly moist.
  9. Incorporate the scrambled eggs into the poha. Mix gently but thoroughly.
  10. Garnish with chopped fresh cilantro and a squeeze of lemon juice.
  11. Serve hot immediately for the best texture and flavor.
