Speedy Bok Choy & Beans Bowl
A simple and healthy bowl with bok choy, beans, and a flavorful dressing.
Ingredients
- 125 g Cooked Beans
- 150 g Bok Choy
- 50 g Pasta
- 1.5 tbsp Soy Sauce
- 1 tsp Sesame Oil
- 1 tsp Rice Vinegar
- 1 tsp Sesame Seeds
- 1 clove, minced Garlic
- Pinch (optional) Red Pepper Flakes
Instructions
- Cook the pasta according to package directions. Drain and set aside.
- Wash and chop the bok choy, separating the white stalks from the leafy greens. Mince the garlic.
- Heat a wok or large skillet over medium-high heat. Add a drizzle of sesame oil.
- Add the minced garlic and red pepper flakes (if using) to the hot pan and stir-fry for about 10 seconds until fragrant, being careful not to burn the garlic.
- Add the white stalks of the bok choy to the pan and stir-fry for 2 minutes. Then, add the leafy greens and continue to stir-fry until the greens are wilted and the stalks are tender-crisp, about 2-3 minutes.
- Add the cooked beans and pasta to the pan with the bok choy. Stir to combine.
- In a small bowl, whisk together soy sauce and rice vinegar.
- Pour the sauce over the pasta, bok choy, and beans mixture. Toss well to ensure everything is evenly coated.
- Transfer the mixture to a serving bowl. Garnish with sesame seeds before serving.
