Mediterranean Quinoa Salad
A refreshing and protein-packed quinoa salad with Mediterranean flavors.
Ingredients
- 1/2 cup Quinoa
- 1/2 cup, diced Cucumber
- 1/2 cup, halved Cherry Tomatoes
- 1/4 cup, finely chopped Red Onion
- 1/4 cup, pitted and halved Kalamata Olives
- 2 tbsp, chopped Fresh Parsley
- 1 tbsp, chopped Fresh Mint
- 2 tbsp Lemon Juice
- 2 tbsp Olive Oil
- 1/2 tsp Dried Oregano
- to taste Salt and Black Pepper
- 1/4 cup Crumbled Vegan Feta (Optional)
Instructions
- Rinse quinoa thoroughly, then cook according to package directions.
- Combine cooked quinoa, cucumber, cherry tomatoes, red onion, and Kalamata olives in a bowl.
- In a separate small bowl, whisk together lemon juice, olive oil, dried oregano, salt, and black pepper.
- Add fresh parsley and mint to the dressing.
- Pour dressing over the quinoa mixture and toss gently to combine.
- If using, gently fold in vegan feta.
- Serve chilled or at room temperature.
