  1. Rinse quinoa thoroughly, then cook according to package directions.
  2. Combine cooked quinoa, cucumber, cherry tomatoes, red onion, and Kalamata olives in a bowl.
  3. In a separate small bowl, whisk together lemon juice, olive oil, dried oregano, salt, and black pepper.
  4. Add fresh parsley and mint to the dressing.
  5. Pour dressing over the quinoa mixture and toss gently to combine.
  6. If using, gently fold in vegan feta.
  7. Serve chilled or at room temperature.
