  1. Dice potatoes into small cubes. Rinse and drain the chickpeas.
  2. Heat 1 tbsp extra virgin olive oil in a skillet over medium heat.
  3. Add thinly sliced onion and cook for 8-10 minutes, stirring occasionally, until caramelized and golden brown. Remove from skillet and set aside.
  4. Add the remaining extra virgin olive oil to the skillet. Add diced potatoes and cook for 10-15 minutes, until potatoes are tender and slightly browned, stirring occasionally to ensure even cooking.
  5. Add chickpeas, caramelized onions, smoked paprika, garlic powder, onion powder, salt, and freshly ground black pepper. Cook for another 5 minutes, stirring occasionally, allowing the flavors to meld together.
  6. Serve hot as a satisfying lunch. Garnish with fresh herbs like parsley or cilantro if desired.
