Potato & Chickpea Hash with Smoked Paprika
A flavorful potato and chickpea hash seasoned with smoked paprika and enhanced with caramelized onions for added depth.
Ingredients
- 1 medium diced into 1/2-inch cubes Potatoes
- 1 cup rinsed and drained Chickpeas
- 2 tbsp Extra virgin olive oil
- 1/2 medium thinly sliced Onion
- 1 tsp Smoked paprika
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/4 tsp Salt
- 1/4 tsp freshly ground Black pepper
Instructions
- Dice potatoes into small cubes. Rinse and drain the chickpeas.
- Heat 1 tbsp extra virgin olive oil in a skillet over medium heat.
- Add thinly sliced onion and cook for 8-10 minutes, stirring occasionally, until caramelized and golden brown. Remove from skillet and set aside.
- Add the remaining extra virgin olive oil to the skillet. Add diced potatoes and cook for 10-15 minutes, until potatoes are tender and slightly browned, stirring occasionally to ensure even cooking.
- Add chickpeas, caramelized onions, smoked paprika, garlic powder, onion powder, salt, and freshly ground black pepper. Cook for another 5 minutes, stirring occasionally, allowing the flavors to meld together.
- Serve hot as a satisfying lunch. Garnish with fresh herbs like parsley or cilantro if desired.
