Sausage and Bean Soup with Crusty Bread

  1. Dice the onion and mince the garlic. If using, finely chop the parsley.
  2. Slice the sausage into 1/2-inch thick pieces.
  3. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  4. Add the sliced sausage and cook until browned on all sides, ensuring it's cooked through to an internal temperature of 160°F (71°C).
  5. Pour in the canned diced tomatoes (undrained), canned cannellini beans (drained and rinsed), soup and chicken broth. Stir in Italian seasoning, red pepper flakes (if using), salt, and pepper.
  6. Bring the soup to a simmer, then reduce heat and cover. Cook for at least 30 minutes, or up to 60 minutes, to allow the flavors to meld. Stir occasionally.
  7. Stir in fresh parsley just before serving.
  8. Serve hot with slices of Whole Wheat Bread.
