Sausage and Bean Soup with Crusty Bread
A protein-rich and comforting soup, perfect for a family dinner.
Ingredients
- 2 cups Soup (any kind, but tomato or vegetable based preferred)
- 3 sausages Sausage (Italian or Andouille preferred)
- 6 slices Whole Wheat Bread
- 1 (19 oz) can Canned Cannellini Beans
- 1 (14 oz) can Diced Tomatoes
- 1 medium Onion
- 3 cloves Garlic
- 2 tbsp Olive Oil
- 2 cups Chicken Broth
- 1 tsp Italian Seasoning
- 1/4 tsp (optional) Red Pepper Flakes
- 2 tbsp chopped Fresh Parsley
- to taste Salt and Black Pepper
Instructions
- Dice the onion and mince the garlic. If using, finely chop the parsley.
- Slice the sausage into 1/2-inch thick pieces.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- Add the sliced sausage and cook until browned on all sides, ensuring it's cooked through to an internal temperature of 160°F (71°C).
- Pour in the canned diced tomatoes (undrained), canned cannellini beans (drained and rinsed), soup and chicken broth. Stir in Italian seasoning, red pepper flakes (if using), salt, and pepper.
- Bring the soup to a simmer, then reduce heat and cover. Cook for at least 30 minutes, or up to 60 minutes, to allow the flavors to meld. Stir occasionally.
- Stir in fresh parsley just before serving.
- Serve hot with slices of Whole Wheat Bread.
