Korean Tomato & Tofu Stir-fry (Dubu Kimchi Inspired)
A quick and easy dairy-free, gluten-free Korean-inspired stir-fry perfect for lunch.
Ingredients
- 150g Firm Tofu
- 1 medium, chopped Tomatoes
- 1 tbsp Soya Sauce
- 1 tsp Sesame Oil
- 1 stalk, chopped Green Onions
- 1/2 tsp (optional) Gochujang (Korean chili paste)
- 1 clove, minced Garlic
- 1/2 tsp, minced Ginger
Instructions
- Press tofu to remove excess water, then cube.
- Heat sesame oil in a pan or wok over medium-high heat.
- Add minced garlic and ginger, stir-fry until fragrant (about 30 seconds).
- Stir-fry tofu until golden brown.
- Add chopped tomatoes and cook until softened.
- Stir in soy sauce and gochujang (if using).
- Garnish with green onions before serving. Serve immediately.
