Mexican-Inspired Black Bean Salad
A refreshing and protein-packed salad with black beans, corn, and a zesty lime dressing.
Ingredients
- 1 cup Black Beans
- 1/2 cup Corn
- 1/4 cup Red Onion
- 1/4 cup Red Bell Pepper
- 2 tbsp Cilantro
- 2 tbsp Lime Juice
- 1 tbsp Extra Virgin Olive Oil
- 1/2 tsp Cumin
- 1/4 tsp Chili Powder
- to taste Salt
- to taste Freshly Ground Black Pepper
Instructions
- If using canned black beans, rinse and drain them thoroughly.
- Combine black beans, corn, finely diced red onion, and finely diced red bell pepper in a bowl.
- Add chopped cilantro, lime juice, extra virgin olive oil, cumin, chili powder, salt, and pepper.
- Toss well to combine all ingredients. Taste and adjust seasoning as needed.
- For best flavor, let the salad sit for at least 30 minutes in the refrigerator before serving. This allows the flavors to meld together.
