Lemon-Herb Baked Haddock with Roasted Tomatoes

  1. Preheat oven to 400°F (200°C).
  2. Wash and halve the tomatoes. Place tomatoes on a baking sheet. Drizzle with 1 tablespoon of olive oil, salt, and pepper. Roast for 25-30 minutes, or until softened and slightly caramelized.
  3. While tomatoes are roasting, place haddock fillets on a separate baking sheet lined with parchment paper.
  4. In a small bowl, combine the remaining olive oil, lemon juice (from 1/2 lemon), minced garlic, dried herbs, green onions, salt, and pepper.
  5. Pour the lemon-herb mixture over the haddock fillets, ensuring they are evenly coated.
  6. Bake for 12-15 minutes, or until haddock is cooked through and flakes easily with a fork. Squeeze remaining 1/2 of the lemon juice on the fish after it has baked.
  7. Serve haddock hot with roasted tomatoes. Spoon pan juices over the fish for added flavor.
