Vegetarian Omelette with Peppers and Onions
Fluffy omelette filled with sautéed bell peppers and onions, a protein-packed vegetarian breakfast option.
Ingredients
- 6 large Eggs
- 1/2 medium, thinly sliced Onion
- 1/2, thinly sliced (any color) Bell pepper
- 1/2 cup Shredded cheddar cheese
- 3 tbsp Milk or cream
- 1 tbsp Butter
- to taste Salt
- to taste Black pepper
Instructions
- In a bowl, whisk together eggs, milk or cream, salt, and pepper until light and frothy.
- Heat butter in a non-stick skillet over medium heat.
- Add thinly sliced onion and bell pepper to the skillet and sauté until softened and slightly caramelized, about 5-7 minutes. Remove from skillet and set aside.
- Pour egg mixture into the same skillet. Cook over low heat, gently lifting the edges of the omelette to allow uncooked egg to flow underneath. Continue cooking until the omelette is mostly set but still slightly moist on top.
- Sprinkle sautéed peppers and onions evenly over one half of the omelette.
- Sprinkle shredded cheddar cheese over the vegetables.
- Gently fold the other half of the omelette over the filling. Cook for another minute or two, until the cheese is melted and the omelette is cooked through but still moist.
- Slide the omelette onto a plate and serve immediately.
