Italian Baked Eggs with Sausage and Spinach
Ingredients
- 1/2 package (250g) Breakfast Sausage
- 3 large Eggs
- 2 cups, chopped Fresh Spinach
- 2 tbsp Cream Cheese
- 1/4 cup Grated Parmesan Cheese
- 1/2 tsp Dried Oregano
- 1/4 tsp Garlic Powder
- Pinch (optional) Red Pepper Flakes
- to taste Salt and Black Pepper
Instructions
- Preheat oven to 375°F (190°C).
- Remove sausage from package and dice into 1/4 inch pieces.
- Brown the sausage in a skillet over medium heat until fully cooked (internal temperature of 160°F/71°C). Drain any excess grease.
- Add the chopped spinach to the skillet and cook until just wilted, about 1-2 minutes. Remove from heat.
- In a small bowl, combine oregano, garlic powder, salt, pepper, and red pepper flakes (if using).
- Divide the sausage and spinach mixture evenly into three lightly greased ramekins.
- Make a well in the center of each ramekin and carefully crack an egg into each well.
- Top each egg with a dollop of cream cheese (about 2/3 tbsp) and sprinkle with parmesan cheese.
- Season the eggs with the spice mixture prepared earlier.
- Bake for 12-18 minutes, or until the eggs are set to your liking. For a runny yolk, check after 12 minutes.
- Let cool slightly before serving. Garnish with extra parmesan or fresh herbs if desired.
