Italian Baked Eggs with Sausage and Spinach

  1. Preheat oven to 375°F (190°C).
  2. Remove sausage from package and dice into 1/4 inch pieces.
  3. Brown the sausage in a skillet over medium heat until fully cooked (internal temperature of 160°F/71°C). Drain any excess grease.
  4. Add the chopped spinach to the skillet and cook until just wilted, about 1-2 minutes. Remove from heat.
  5. In a small bowl, combine oregano, garlic powder, salt, pepper, and red pepper flakes (if using).
  6. Divide the sausage and spinach mixture evenly into three lightly greased ramekins.
  7. Make a well in the center of each ramekin and carefully crack an egg into each well.
  8. Top each egg with a dollop of cream cheese (about 2/3 tbsp) and sprinkle with parmesan cheese.
  9. Season the eggs with the spice mixture prepared earlier.
  10. Bake for 12-18 minutes, or until the eggs are set to your liking. For a runny yolk, check after 12 minutes.
  11. Let cool slightly before serving. Garnish with extra parmesan or fresh herbs if desired.
