  1. Preheat oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter.
  2. Cook bacon in a skillet until crispy. Remove bacon, drain excess fat, crumble, and set aside, reserving 1 tablespoon of bacon fat.
  3. In a bowl, whisk eggs, milk, salt, black pepper, and nutmeg until well combined.
  4. Sauté the diced mini bell peppers in the reserved bacon fat until slightly softened, about 2-3 minutes. Stir in the chopped spinach until wilted.
  5. Evenly distribute the sautéed vegetables and crumbled bacon into the prepared muffin tin.
  6. Pour egg mixture into muffin cups, filling each about 3/4 full.
  7. Bake for 15-20 minutes, or until the frittatas are set and lightly golden. A toothpick inserted into the center should come out clean.
  8. Let cool slightly in the muffin tin before removing. Serve warm.
