Bacon & Spinach Frittata Bites
Individual frittatas loaded with bacon, spinach, and mini bell peppers, perfect for a quick and nutritious breakfast.
Ingredients
- 6 slices Bacon
- 6 large Eggs
- 1 cup, chopped Spinach
- 1/2 cup, diced Mini Bell Peppers
- 1/4 cup Milk
- 1/4 tsp Salt
- 1/4 tsp, freshly ground Black Pepper
- Pinch Nutmeg
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter.
- Cook bacon in a skillet until crispy. Remove bacon, drain excess fat, crumble, and set aside, reserving 1 tablespoon of bacon fat.
- In a bowl, whisk eggs, milk, salt, black pepper, and nutmeg until well combined.
- Sauté the diced mini bell peppers in the reserved bacon fat until slightly softened, about 2-3 minutes. Stir in the chopped spinach until wilted.
- Evenly distribute the sautéed vegetables and crumbled bacon into the prepared muffin tin.
- Pour egg mixture into muffin cups, filling each about 3/4 full.
- Bake for 15-20 minutes, or until the frittatas are set and lightly golden. A toothpick inserted into the center should come out clean.
- Let cool slightly in the muffin tin before removing. Serve warm.
