  2. In a pot, combine water, low-sodium soy sauce, and coconut milk. Bring to a simmer.
  3. Dissolve miso paste in a small amount of the broth before adding it to the pot.
  4. Add sliced mushrooms and simmer for 5 minutes until tender.
  5. Place cooked noodles in a bowl, pour broth over noodles, and top with green onions and a soft-boiled egg.
  6. Serve hot.
