Low-Sodium Ramen Noodle Bowl
Ingredients
- 1 package (60g) Ramen
- 1 tbsp Organic Miso
- 1/2 cup Organic Coconut Milk
- 2 cups Water
- 1 tsp Soy Sauce (low-sodium)
- 1/4 cup, sliced Green Onions
- 1/2 cup, sliced Mushrooms
- 1 Soft-boiled Egg
Instructions
- Cook ramen noodles according to package instructions, discarding the seasoning packet to control sodium.
- In a pot, combine water, low-sodium soy sauce, and coconut milk. Bring to a simmer.
- Dissolve miso paste in a small amount of the broth before adding it to the pot.
- Add sliced mushrooms and simmer for 5 minutes until tender.
- Place cooked noodles in a bowl, pour broth over noodles, and top with green onions and a soft-boiled egg.
- Serve hot.
