Spinach & Artichoke Quinoa Salad
A warm, comforting salad with flavors reminiscent of spinach artichoke dip.
Ingredients
- 1/2 cup Quinoa
- 1/2 cup, quartered and drained Canned Artichoke Hearts
- 2 cups Fresh Baby Spinach
- 1 clove, minced Garlic
- 2 tbsp Nutritional Yeast
- 1 tsp Lemon Juice
- 1 tbsp Extra Virgin Olive Oil
- Pinch Red Pepper Flakes
Instructions
- Rinse quinoa thoroughly. Cook quinoa according to package instructions.
- While quinoa cooks, sauté minced garlic in extra virgin olive oil over medium heat until fragrant, about 1 minute.
- Add baby spinach and cook until wilted, about 2 minutes.
- Stir in quartered artichoke hearts, cooked quinoa, nutritional yeast, lemon juice, and a pinch of red pepper flakes.
- Heat through, stirring constantly, until well combined and flavors have melded.
- Serve warm immediately.
