  1. Rinse quinoa thoroughly. Cook quinoa according to package instructions.
  2. While quinoa cooks, sauté minced garlic in extra virgin olive oil over medium heat until fragrant, about 1 minute.
  3. Add baby spinach and cook until wilted, about 2 minutes.
  4. Stir in quartered artichoke hearts, cooked quinoa, nutritional yeast, lemon juice, and a pinch of red pepper flakes.
  5. Heat through, stirring constantly, until well combined and flavors have melded.
  6. Serve warm immediately.
