  1. In a large skillet, brown ground beef over medium heat. Drain any excess fat. Pat the beef dry with a paper towel before browning for better caramelization.
  2. Add cauliflower rice and taco seasoning to the skillet. Cook for 5-7 minutes, or until the cauliflower rice is tender and the flavors have melded.
  3. In a small bowl, combine Greek yogurt and lime juice. Mix well. Add a pinch of salt and chopped cilantro. Taste and adjust seasoning as needed. This creates a tangy and slightly thicker crema.
  4. Divide the ground beef mixture among bowls. Top with diced avocado, cheddar cheese, diced tomatoes and chopped red onion
  5. Serve immediately, with a dollop of lime crema on top.
