Mexican Cauliflower Rice Bowls with Lime Crema
Flavorful Mexican-inspired bowls with cauliflower rice, seasoned ground beef, and a tangy lime crema with cilantro.
Ingredients
- 1 lb, lean (90/10) Ground beef
- 2 cups, fresh or frozen Cauliflower rice
- 2 tbsp, homemade or store-bought Taco seasoning (low sodium)
- 1 large, diced Avocado
- 1/2 cup Shredded cheddar cheese (low sodium)
- 1/2 cup, full-fat Plain Greek yogurt
- 2 tbsp, fresh Lime juice
- 1/4 cup Fresh cilantro, chopped
- 1/2 cup Diced tomatoes
- 1/4 cup Chopped red onion
Instructions
- In a large skillet, brown ground beef over medium heat. Drain any excess fat. Pat the beef dry with a paper towel before browning for better caramelization.
- Add cauliflower rice and taco seasoning to the skillet. Cook for 5-7 minutes, or until the cauliflower rice is tender and the flavors have melded.
- In a small bowl, combine Greek yogurt and lime juice. Mix well. Add a pinch of salt and chopped cilantro. Taste and adjust seasoning as needed. This creates a tangy and slightly thicker crema.
- Divide the ground beef mixture among bowls. Top with diced avocado, cheddar cheese, diced tomatoes and chopped red onion
- Serve immediately, with a dollop of lime crema on top.
