  2. Wash and thoroughly dry the spinach. Roughly chop the spinach.
  3. Whisk eggs with milk, nutmeg, salt, and pepper.
  4. Stir in spinach and feta cheese.
  5. Pour mixture evenly into prepared muffin cups, filling almost to the top.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool slightly before removing from muffin tin. Serve warm or at room temperature.
