Spinach and Feta Egg Bites
A healthy and delicious low-carb breakfast option featuring a savory blend of spinach, creamy feta cheese, and aromatic herbs baked to perfection.
Ingredients
- 8 large Eggs
- 5 cups Baby Spinach
- 1 cup crumbled Feta Cheese
- 1/2 cup Milk (low carb e.g. almond milk)
- 1/4 tsp Nutmeg
- to taste Salt
- to taste Black Pepper
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
- Wash and thoroughly dry the spinach. Roughly chop the spinach.
- Whisk eggs with milk, nutmeg, salt, and pepper.
- Stir in spinach and feta cheese.
- Pour mixture evenly into prepared muffin cups, filling almost to the top.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool slightly before removing from muffin tin. Serve warm or at room temperature.
