Zesty Mediterranean Chickpea and Tomato Salad
A vibrant and refreshing Mediterranean salad featuring chickpeas, tomatoes, cucumber, Kalamata olives, and a zesty lemon-oregano dressing.
Ingredients
- 1 cup, diced Tomatoes
- 1/2 cup, cooked Chickpeas
- 1/2 cup, diced Cucumber
- 1/4 cup, halved Kalamata olives
- 2 tbsp, diced Red onion
- 1 tbsp Olive oil
- 1 tbsp Lemon juice
- 1/2 tsp Dried oregano
- 1 tbsp, chopped Fresh parsley
- 1/2 clove, minced Garlic
Instructions
- In a bowl, combine diced tomatoes, chickpeas, cucumber, Kalamata olives, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, and dried oregano. Season with salt and pepper to taste.
- Pour dressing over the salad and mix gently to combine.
