Thai Curry Chickpea & Tomato Bowl

  1. In a saucepan, combine chickpeas, diced tomatoes, coconut milk, and red curry paste.
  2. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  3. Add lime juice and vegan fish sauce (or gluten-free soy sauce) and stir to combine. Taste and adjust seasoning as needed.
  4. Serve over cooked rice, and garnish with fresh cilantro.
