Thai Curry Chickpea & Tomato Bowl
A Thai-inspired bowl with chickpeas, tomatoes, and coconut milk, served over rice.
Ingredients
- 1 cup Chickpeas
- 1 cup Canned Diced Tomatoes
- 1/2 cup Coconut Milk
- 1 tbsp Red Curry Paste (Gluten-Free)
- 1 cup Cooked Rice (Gluten-Free)
- 1 tbsp Lime Juice
- 2 tbsp, chopped Fresh Cilantro
- 1/2 tsp (or more to taste) Fish Sauce (Vegan)
Instructions
- In a saucepan, combine chickpeas, diced tomatoes, coconut milk, and red curry paste.
- Bring to a simmer and cook for 15 minutes, stirring occasionally.
- Add lime juice and vegan fish sauce (or gluten-free soy sauce) and stir to combine. Taste and adjust seasoning as needed.
- Serve over cooked rice, and garnish with fresh cilantro.
