Mediterranean Pasta Salad with Feta and Olives
A refreshing pasta salad with feta cheese, olives, and mini bell peppers, perfect for a light vegetarian lunch.
Ingredients
- 250 g Pasta Noodles
- 150 ml Pasta Sauce
- 1 cup, sliced Mini Bell Peppers
- 1 cup, chopped Spinach
- 100 g, crumbled Feta Cheese
- 1 tbsp, chopped Fresh Basil
- To taste Salt and Black Pepper
- 1/2 tsp Dried Oregano
Instructions
- Cook pasta according to package directions until al dente. Drain and rinse with cold water to stop cooking.
- In a large bowl, combine cooked pasta, pasta sauce, mini bell peppers, spinach, halved olives, and feta cheese.
- In a small bowl, whisk together rice vinegar, extra virgin olive oil, chopped fresh basil, salt, black pepper, and dried oregano.
- Pour dressing over pasta mixture and toss gently to combine. Ensure all ingredients are well coated.
- Taste and adjust seasoning as needed. Refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled or at room temperature.
