  1. Dice potatoes into 1/2-inch cubes and dice tomatoes. Dicing the potatoes evenly will help them cook at the same rate
  2. Dice onion.
  3. Heat olive oil in a skillet over medium heat. Add diced potatoes and onion and cook, stirring occasionally, until potatoes are golden brown and tender, about 15-20 minutes.
  4. Add tomatoes, smoked paprika, garlic powder, salt, and pepper. Cook until tomatoes soften and the flavors meld, about 5 minutes. Avoid overcrowding the pan for better browning
  5. Taste and adjust seasonings as needed. Serve hot.
