American Potato & Tomato Hash with Smoked Paprika
Hearty American-style hash with potatoes, tomatoes, smoked paprika, and simple seasonings.
Ingredients
- 1 medium, Russet or Yukon Gold Potatoes
- 1 medium, diced Tomatoes
- 1 tbsp Olive oil
- 1/4 medium, diced Onion
- 1/2 tsp Smoked paprika
- 1/4 tsp Garlic powder
- to taste Salt
- to taste Pepper
Instructions
- Dice potatoes into 1/2-inch cubes and dice tomatoes. Dicing the potatoes evenly will help them cook at the same rate
- Dice onion.
- Heat olive oil in a skillet over medium heat. Add diced potatoes and onion and cook, stirring occasionally, until potatoes are golden brown and tender, about 15-20 minutes.
- Add tomatoes, smoked paprika, garlic powder, salt, and pepper. Cook until tomatoes soften and the flavors meld, about 5 minutes. Avoid overcrowding the pan for better browning
- Taste and adjust seasonings as needed. Serve hot.
