Caprese Stuffed Chicken with Balsamic Glaze
Chicken breasts stuffed with fresh mozzarella and tomatoes, drizzled with a tangy balsamic glaze.
Ingredients
- 600 g Boneless Skinless Chicken Breasts
- 250 g, sliced Fresh mozzarella
- 500 g, sliced Tomatoes on the Vine
- 1/4 cup, chiffonade cut Fresh basil leaves
- 2 tbsp Balsamic glaze
- 1/4 tsp Garlic powder
- To taste Salt
- To taste Black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Slice each chicken breast horizontally, without cutting all the way through, to create a pocket.
- In a small bowl, mix mozzarella slices, tomato slices, and basil. Sprinkle with garlic powder, salt, and pepper.
- Stuff each chicken pocket with the mozzarella mixture. Secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the stuffed chicken breasts for 2-3 minutes per side, until lightly browned.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken reaches an internal temperature of 165°F (74°C). Remove toothpicks before serving.
- Drizzle with balsamic glaze before serving.
