  2. Slice each chicken breast horizontally, without cutting all the way through, to create a pocket.
  3. In a small bowl, mix mozzarella slices, tomato slices, and basil. Sprinkle with garlic powder, salt, and pepper.
  4. Stuff each chicken pocket with the mozzarella mixture. Secure with toothpicks if needed.
  5. Heat olive oil in an oven-safe skillet over medium-high heat.
  6. Sear the stuffed chicken breasts for 2-3 minutes per side, until lightly browned.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken reaches an internal temperature of 165°F (74°C). Remove toothpicks before serving.
  8. Drizzle with balsamic glaze before serving.
