Sweet Pepper & Egg Scramble with Whole Wheat Toast
A flavorful and nutritious breakfast scramble featuring sweet mini bell peppers, cheddar cheese, and served with whole wheat toast and pastries.
Ingredients
- 1/2 cup, diced Mini Bell Peppers
- 6 large Eggs
- 2 tbsp Milk
- 1/4 cup, shredded Cheddar Cheese
- 3 slices Whole Wheat Bread
- 3 Wafers or Turnovers
- 1 tbsp Butter
- to taste Salt and Pepper
- to taste Hot Sauce (optional)
Instructions
- In a bowl, whisk together eggs and milk. Season with salt and pepper.
- Heat butter in a non-stick skillet over medium heat. Add diced mini bell peppers and sauté until softened, about 3-5 minutes.
- Pour egg mixture into the skillet and cook, stirring occasionally, until eggs are set but still slightly moist.
- Sprinkle cheddar cheese over the eggs and cook until melted.
- Toast whole wheat bread.
- Divide egg scramble among plates and serve with toasted bread, a dash of hot sauce (if using), and pastries.
