Avocado & Black Bean Quinoa Bowl
A protein-packed bowl with quinoa, black beans, avocado, and a drizzle of lime.
Ingredients
- 1/2 cup Quinoa
- 1 cup, rinsed and drained Canned Black Beans
- 1/2 Hass Avocado
- 1/2 Lime
- to taste, chopped Fresh Cilantro
- 1/4 tsp Cumin
- 1/8 tsp Chili Powder
Instructions
- Rinse quinoa thoroughly. Cook quinoa according to package instructions.
- In a bowl, combine cooked quinoa and rinsed black beans.
- Add cumin and chili powder; stir to combine.
- Top with sliced avocado and a squeeze of lime juice.
- Garnish with fresh cilantro.
- Serve immediately. Optionally, add a dollop of dairy-free sour cream or salsa for extra flavor.
