Lemony Chickpea and Spinach Salad with Quinoa
A bright and healthy salad with chickpeas, spinach, quinoa, and a zesty lemon dressing.
Ingredients
- 1/2 cup Quinoa
- 1 cup Chickpeas
- 2 cups Baby Spinach
- 1/2 Lemon
- 1 tbsp Extra Virgin Olive Oil
- to taste Sea Salt
- to taste Freshly Ground Black Pepper
- 1 tbsp, chopped Fresh Mint
Instructions
- Rinse quinoa thoroughly. Cook quinoa according to package instructions; fluff with a fork and let cool slightly.
- In a large bowl, combine cooked quinoa, chickpeas, and baby spinach.
- In a small bowl, whisk together lemon juice, extra virgin olive oil, sea salt, freshly ground black pepper, and fresh mint.
- Pour dressing over salad and gently toss to combine.
- Serve chilled or at room temperature. For best flavor, let sit for 15 minutes before serving.
