  1. If using fresh tomatoes, roast them under a broiler until the skin is charred. Let cool, then peel and dice. If using canned fire-roasted tomatoes, drain excess liquid and dice.
  2. Dice the potatoes into small pieces.
  3. Mince the garlic.
  4. Heat olive oil in a pot over medium heat. Add garlic and cook until fragrant.
  5. Add fire-roasted tomatoes and potatoes to the pot and cook for 5 minutes.
  6. Pour in the vegetable broth and add Italian seasoning, red pepper flakes, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.
  8. Use an immersion blender to partially blend the soup for a creamy texture, leaving some chunks for heartiness. Alternatively, process in a standard blender in batches.
  9. Serve hot, drizzled with balsamic glaze if desired.
