Italian Tomato & Potato Soup
A hearty and comforting soup featuring fire-roasted tomatoes and potatoes with Italian herbs and a touch of balsamic glaze.
Ingredients
- 2 medium, fire-roasted for enhanced flavor Tomatoes
- 1 medium, diced Potatoes
- 2 cups Vegetable broth
- 1 clove minced Garlic
- 1 tbsp Olive oil
- 1 tsp Italian seasoning
- Pinch Red pepper flakes
- to taste Salt
- to taste Pepper
- 1 tsp (optional) Balsamic glaze
Instructions
- If using fresh tomatoes, roast them under a broiler until the skin is charred. Let cool, then peel and dice. If using canned fire-roasted tomatoes, drain excess liquid and dice.
- Dice the potatoes into small pieces.
- Mince the garlic.
- Heat olive oil in a pot over medium heat. Add garlic and cook until fragrant.
- Add fire-roasted tomatoes and potatoes to the pot and cook for 5 minutes.
- Pour in the vegetable broth and add Italian seasoning, red pepper flakes, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.
- Use an immersion blender to partially blend the soup for a creamy texture, leaving some chunks for heartiness. Alternatively, process in a standard blender in batches.
- Serve hot, drizzled with balsamic glaze if desired.
