Low-Fat Vegetable Curry with Rice
A light and flavorful Indian curry made with mixed vegetables and spices, served with rice.
Ingredients
- 2 cups, chopped Mixed Vegetables (broccoli, carrots, cauliflower)
- 1/2 cup, diced Onion
- 2 cloves, minced Garlic
- 1 tsp, grated Ginger
- 2 tsp Curry Powder
- 1 cup Low Sodium Broth
- 1 cup Basmati Rice
- 1/2 tsp Turmeric Powder
- 1/2 tsp Cumin Powder
Instructions
- Sauté onion, Garlic, and ginger in a pot with a little water or low sodium broth until softened.
- Add Curry Powder, Turmeric Powder, and Cumin Powder and cook for another minute, stirring continuously, until fragrant.
- Stir in mixed vegetables and low sodium broth. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until vegetables are tender.
- Serve hot with cooked Basmati Rice. Garnish with fresh cilantro, if desired.
