Instructions

  1. Sauté onion, Garlic, and ginger in a pot with a little water or low sodium broth until softened.
  2. Add Curry Powder, Turmeric Powder, and Cumin Powder and cook for another minute, stirring continuously, until fragrant.
  3. Stir in mixed vegetables and low sodium broth. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until vegetables are tender.
  4. Serve hot with cooked Basmati Rice. Garnish with fresh cilantro, if desired.
