  1. Heat extra virgin olive oil in a pan over medium heat.
  2. Add rinsed and drained chickpeas and cook for 5-7 minutes, until lightly browned and slightly crispy.
  3. In a bowl, combine cooked brown rice, fresh spinach, browned chickpeas, and halved cherry tomatoes.
  4. In a small bowl, whisk together fresh lemon juice, chopped fresh basil, garlic powder, dried thyme, salt, and black pepper.
  5. Pour dressing over the rice mixture and toss gently to combine. Serve immediately.
