Chickpea & Tomato Rice Bowl with Lemon-Herb Dressing
A light and fresh rice bowl featuring chickpeas and tomatoes in a lemon-herb dressing.
Ingredients
- 1/2 cup canned chickpeas, rinsed and drained Chickpeas
- 1/2 cup cherry tomatoes, halved Cherry Tomatoes
- 1 cup cooked brown rice Cooked Rice
- 1 cup, fresh Spinach
- 1 tbsp Extra Virgin Olive Oil
- 1 tbsp fresh Lemon Juice
- 2 tbsp, chopped Fresh Basil
- 1/4 tsp Garlic Powder
- 1/4 tsp Dried Thyme
- to taste Salt and Black Pepper
Instructions
- Heat extra virgin olive oil in a pan over medium heat.
- Add rinsed and drained chickpeas and cook for 5-7 minutes, until lightly browned and slightly crispy.
- In a bowl, combine cooked brown rice, fresh spinach, browned chickpeas, and halved cherry tomatoes.
- In a small bowl, whisk together fresh lemon juice, chopped fresh basil, garlic powder, dried thyme, salt, and black pepper.
- Pour dressing over the rice mixture and toss gently to combine. Serve immediately.
