  1. Crumble the sunrise tofu in a bowl.
  2. In a skillet, sauté diced onion and sliced mushrooms in olive oil until softened.
  3. Add diced rainbow peppers and continue to sauté for another 2-3 minutes.
  4. Add the crumbled tofu to the skillet.
  5. Season with salt, black pepper, onion powder, and turmeric for color (if available).
  6. Stir frequently and cook until tofu is heated through and slightly browned.
  7. Serve hot as a high-protein and no-added-sugar lunch.
