Vegetable Pulao with Yogurt Raita
A flavorful and aromatic rice dish with mixed vegetables and a cooling yogurt raita.
Ingredients
- 1/2 cup Rooster Scented Jasmine Rice
- 1/4 cup, chopped Yellow Onion
- 1/4 cup, chopped Carrots
- 1/4 cup, sliced Mushrooms
- 1/4 cup, chopped Green & Red Peppers
- 1/2 cube Bouillon Cube
- 1/2 tsp Ginger Garlic Paste
- 1/4 tsp Garam Masala
- 1/4 tsp Turmeric Powder
- 1/4 tsp Cumin Seeds
- 1 tbsp Vegetable Oil
- 1 cup Water
- 1/2 cup Greek Yogurt
- 1 tbsp, chopped Cilantro
- 1 tbsp, chopped Green Onions
Instructions
- Wash rice thoroughly and soak for 30 minutes.
- Heat oil in a pot, add cumin seeds and let them sizzle.
- Add chopped onion and saute until golden brown.
- Add ginger garlic paste and saute for a minute.
- Add carrots, mushrooms, and green peppers, saute for 5 minutes.
- Add garam masala and turmeric powder, saute for another minute to bloom the spices.
- Add soaked rice, water and crumbled bouillon cube, bring to a boil.
- Reduce heat to low, cover and cook until rice is cooked and water is absorbed.
- Let the pulao rest for 5 minutes before fluffing with a fork.
- For raita, mix yogurt with chopped cilantro and green onions. Season with salt to taste.
- Serve vegetable pulao hot with yogurt raita.
