Vegetable Pulao with Yogurt Raita

  1. Wash rice thoroughly and soak for 30 minutes.
  2. Heat oil in a pot, add cumin seeds and let them sizzle.
  3. Add chopped onion and saute until golden brown.
  4. Add ginger garlic paste and saute for a minute.
  5. Add carrots, mushrooms, and green peppers, saute for 5 minutes.
  6. Add garam masala and turmeric powder, saute for another minute to bloom the spices.
  7. Add soaked rice, water and crumbled bouillon cube, bring to a boil.
  8. Reduce heat to low, cover and cook until rice is cooked and water is absorbed.
  9. Let the pulao rest for 5 minutes before fluffing with a fork.
  10. For raita, mix yogurt with chopped cilantro and green onions. Season with salt to taste.
  11. Serve vegetable pulao hot with yogurt raita.
